If you don't really want to be spending any extra time on the dishes and you need easy potluck ideas that don't take up a lot of time, here are some that you'll find perfect to make.

Meat Balls

For this easy potluck recipe, you could prepare the meatballs on your own or buy a frozen pack from the store.
Simply bake the meatballs in an oven till they are soft and juicy and then pour sweet and sour sauce onto the meatballs. Or you can make a dip with equal parts of coriander leaves, mint leaves, green chili, yogurt, and salt to taste. Then serve both separately. It's simple and quick.

Roasted Veggies

Now, that might not really sound like a tasty dish to devour, but it is so, so tasty if you do it right.
Start off by chopping carrots, red onions, cabbage strands, garlic cloves, asparagus, and zucchini and transfer into a large bowl. Add salt, 1 tbsp. olive oil, 1-2 tsp. vinegar, and a pinch of marjoram. Mix well so that the vegetables are coated with all the spices. Then put into an oven and bake for 40 minutes at a temperature of 350 ºF. Ready to serve.

Veggie Salad

Cut cucumbers, carrots, tomatoes, onions, lettuce leaves, and cabbage strands and put them in a bowl. Now, add salt, olive pieces, and any salad dressing of your choice over it. If you like the sour taste more, you can add a little olive water to it as well. Simply toss and have it fresh. This makes for a perfect side dish.

Poppadom Salad

Poppadom is an Indian flattened bread that is similar to nachos, but thinner and comes with a distinct taste. It comes in different flavors like garlic and cumin. All you do is toast the flat poppadom on a low flame till they are roasted. They can be slightly pungent so make sure that you taste this first before taking it to the potluck meet.
In a separate bowl, cut fine pieces of tomato, onions, and coriander leaves, and add salt, lemon juice, and chili powder to it. Mix well and keep separately. When it is time to serve, just spread this mix over the poppadom and eat. This has to be done right before you eat it or else the spread will make the bread soggy.

Deviled Eggs

Always a favorite and perfect for a potluck dinner idea. Halve the boiled eggs lengthwise and keep the yolk aside.
Collect about 16-18 yolks and then add mayonnaise, cheese, chives, mustard, relish, and salt to them. Put them in a food processor and blend well till smooth. Now, take a spoon and place a scoop in each egg half. Garnish with sauce or paprika.

Garlic Bread

Take a slice of bread and halve it. Now, make a mixture of crushed garlic, coriander leaves, and green chili. Add a small tsp. of butter onto a pan and spread it over the bread, and then mix the fine green chili and garlic paste over the bread.

Kebabs

If you want a fancier dish, something more exquisite, then go in for kebabs. The best part of this is that you can make them with any ingredient―vegetarian or non vegetarian.
Simply use chicken or meat pieces and marinate them in spices of your own choice. Then transfer onto a grilling stick and grill on a regular barbecue machine. If possible, transfer onto chopsticks and serve one stick to one person. You can also include dips for an added flavor kick.
Use these potluck ideas and when a good one has been reached upon, you can just get on with the potluck invitation and stop the worrying.
