Bonfire Party Food Recipes

Barbecue Fish

 
Ingredients
  • 4 skinless pomfret
  • 6 dried Kashmiri chillies
  • 2 chopped onions
  • 2 tsp tamarind pulp
  • 1 tsp cumin seeds
  • 1 tsp black peppercorns
  • 1/2 tsp turmeric
  • 1/2 tsp sugar
  • 2 cloves chopped garlic
  • 1 tbsp cider vinegar
  • Rice flour for dusting.

Method of Preparation

  • Soak the chillies in warm water for around 10 minutes. Drain the water and remove the seeds from chillies.
  • Mix and grind all the spices, onion, sugar, and vinegar, blend until smooth. Add salt to taste.
  • Spread this spicy paste on both the sides of the pomfret fillet, dust with rice flour.
  • Cook on barbecue or a preheated grill for 1-2 minutes on both sides.

Baked Potatoes

Ingredients
  • Potatoes
  • Filling as required

Method of Preparation

  • Wash the potatoes and wrap them in foils individually. Cook them in the barbecue for 1-1½ hours.
  • Precook them in an oven or a microwave till properly baked to save time. These semi-cooked potatoes can be grilled on the barbecue until crisp!
  • Scoop out the potato and fill stuffing of your choice in the potato. Cheese, bacon, etc. make up excellent filling.
